09/04/2019 | NewsHere at the Celtic Ross hotel, local produce is always at the heart of our food philosophy. Along with all our existing food heroes, we are excited to discover some new ones too! On a monthly basis, we will be showcasing the very best local produce West Cork has to offer #celticrossfoodheroes
So far we have celebrated O'Driscoll's Butchers in Skibbereen and Skeaghanore Duck. This month we turn to Caroline Murphy of West Cork Eggs. A family farm just outside Rosscarbery, Caroline's hens have good food, freedom and lots of fun and they give us and our guests delicious free range, local eggs.
For the month of April we will be featuring West Cork Eggs in two special dishes created by Executive Chef Alex Petit, Poached West Cork egg wild mushroom on toasted sourdough and local wild garlic pesto and West Cork baked egg tart, lemon curd, lime creme fraîche and toasted pistachio available daily from 5-9pm.
